Healthy salted caramel slices

Day 20 I was craving something sweet as an afternoon treat during lockdown and these hit the spot perfectly!! They taste naughty but are full of wholesome ingredients that will keep you full whilst also satisfying your sweet tooth.

Base ingredients:
1/2 cup oats
1 cup ground almonds
Tsp vanilla essence
Pinch sea salt
Tbsp coconut oil
4 medjool dates (or 8 regular dates)
1/4 cup water

Filling ingredients:
4 medjool dates (or 8 regular ones)
1/4 cup almond butter
1/4 cup coconut butter 

Topping ingredients:
100g (one bar) dark chocolate 70%
Pinch of sea salt 

What to do…
You’ll need a blender for this recipe. Put the dates and water for the base in the blender and pulse until the dates are broken up. Then add the remaining ingredients for the base and blend until thoroughly combined. Line a small tin (about 20 x 25cm) with baking paper. If you don’t have a small tin you can use a larger one and only fill it half way (or double the recipe). Press the base mixture into the tin so that it is about 1cm thick all over. Put the tin in the freezer while you make the filling. 

For the filling blend all the ingredients in a blender, this may take some time as the mixture is quite thick. If it’s taking some time add a little water to loosen it. 

Remove the base from the freezer and pour the caramel filling on top. Since the base is cold the caramel will become quite difficult to manage so you need to work fast. The best method is to slightly wet your fingers so that you can press the caramel into the base without it getting stuck on your hands. Make sure the caramel is spread evenly over the base, then return the tray to the freezer. 
Melt the chocolate in a bowl over a pan of simmering water, until just liquid and then remove from the heat. Remove the caramel slices from the freezer and pour over the chocolate. Again this will set very quickly so be careful. Once you have spread the chocolate evenly, sprinkle with a generous pinch or two of sea salt flakes. Return to the freezer to set for 30 mins. 

When ready to cut into slices, put a sharp knife under hot water, this allows you to cut through the chocolate layer without it breaking.

They taste so good even he dog was interested….
