Day #14 Chicken rice paper rolls with lime mayo. No cooking is involved in this recipe. I was craving sushi, so this is a take on sushi but with cooked chicken since we don’t have access to raw fish at the moment!! We had some leftover fried chicken breast from the weekend which I cut into small strips, but you could also use cooked prawns.
4 rice paper sheets
1 small carrot peeled
1/2 cucumber peeled
Handful of bean sprouts
Tbsp pickled ginger (sushi ginger)
1 cooked chicken breast / prawns
For the lime mayo:
3 tbsp mayonnaise
juice and zest of 1 lime
What to do…
You can buy rice paper sheets in most big supermarkets. They come solid and you just need to soak them for a minute in warm water to soften them, do this step by step as you make each one.
Chop the cucumber, carrot and mango into fine matchsticks. Slice the cooked chicken breast.
Soak your first rice paper sheet in a shallow bowl of warm water for a minute. Remove and let the water drain off a little. Put on a clean surface. Place the raw veg in the centre, the chicken, bean sprouts and ginger, do not overfill it as it will be hard to roll. Fold first the left and then the right side over, then fold the bottom over the top and roll (see video).
For the dip simply mix mayo with grated lime zest and a little lime juice. We also used coconut aminos for dipping – soy sauce also works well as a dip.
