On a trip to Ireland I tried to squeeze in as many health food shops as I could. One thing I discovered was matcha porridge, with only a slight taste of matcha and mixed with cinnamon it makes a delicious combination. So I created this porridge with a warming pear compote to compliment the cinnamon and matcha. I always like to add a little crunch to my porridge and the pistachios do just that. The perfect winter morning warmer!
2 cups porridge oats
2 tsp cinnamon
2 tsp matcha powder
2 cups water
2 cups rice or almond milk
For the topping:
tbsp maple syrup
2 tbsp coconut or other yoghurt
2 tbsp pistachio nuts (chopped)
What to do…
Firstly make your topping. Chop your pears in half and remove the core and pips. Chop into bite sized chunks and place in a small saucepan. Add 2-3 tablespoons of warm water to the pan along with the cinnamon and heat gently. The pears should take between 5 and 10 minutes to cook depending on the size of the chunks and the ripeness of your fruit. You want the pears to be hot all the way through and softened. After 5 minutes cooking add the maple syrup. If the pears look a little dry also add a couple more tablespoons of water. Allow to cook gently while you make the porridge.
Place the porridge oats, cinnamon and matcha in a large saucepan with the water and the milk of your choice, bring to the boil and simmer for 3-4 minutes. Stir the porridge as it cooks. The oats should be soft and the liquid absorbed. If it becomes too thick gradually add slightly more milk until it is the consistency you like.
Spoon the porridge into bowls, add a tablespoon of your chosen yoghurt to the top. Then spoon over the pears along with their juices. Finally top with crunchy pistachios and a little drizzle of maple syrup.
