This is my simple breakfast recipe, no added superfoods or powders just easy overnight breakfast that will make your morning easy. Here I’ve used almonds but feel free to swap them for seeds or coconut flakes also work well. The apple adds sweetness and a bit more moisture, and the sultanas get nice and plump overnight. This recipe makes the perfect portion for one person but the simple ratio means you can make a big batch of it for the week. Try it with different toppings such as fresh fruit, toasted nuts or yoghurt.
1/2 cup oats
1 cup milk of your choice (I used homemade almond milk
1 tbsp sultanas (or a mix of sultanas and goji berries)
1 tbsp flaked almonds (seeds or coconut flakes)
For the topping:
1 tbsp flaked almonds
What to do…
This couldn’t be simpler, I usually use a large jar to mix the ingredients, it means you can shake it to combine everything and easily seal and store it in the fridge.
First grate your apple on the large side of a box grater. Place this in the jar, then add your oats, milk, sultanas and flaked almonds (if using). Stir it all together or put the lid on and give it a shake. It will look a bit runny but the liquid will be soaked up by the oats and dried fruit overnight.
In the morning your breakfast will be ready to go just top with your favourite fruit or toast some flaked almonds and sprinkle on top with a glug of maple syrup.
