Energy balls with a hidden surprise. As I’ve mentioned before I’m a little obsessed with nut butters, particularly spooning it straight from the jar into my mouth. So with this recipe you get the best of both, an energy ball and a dollop of cashew butter. Making them taste extra indulgent.
15 x 1/2 tsp cashew butter
1 cup almonds
1/2 cup cashews
1/2 cup walnuts
1/4 cup goji berries
1 tbsp maca powder or lucuma powder
1 tbsp bee pollen
1 cup dates
1/2 cup coconut oil
What to do…
To start with you need to make the gooey centres to the bombs. Get a small tray or chopping board that will fit in your freezer. Place a piece of greeseproof paper on the board. Using two teaspoons put small blobs of cashew butter on the paper (1/2 tsp of butter per blob), make 15 of these then immediately put the tray in the freezer. This will give the butter time to harden.
While the cashew butter is setting put all the nuts in your food prosessor along with the goji berries and pulse until finely chopped. Do this in small pulses to make sure you don’t end up with completely ground nuts, you want a chunky mixture. Next add the remaining ingredients to the bowl, you may wish to gently melt your coconut oil in a saucepan if it’s really solid.
The mixture will now start to stick together. Once combined turn the prosessor off. Using your hands grab a handful of mixture and compress into a ball in the palm of your hands. This should be slightly larger than golf ball sized, as you need space for the filling. When rolling each ball, hold it in the palm of your hand and make a small hole using your little finger. Lay the ball on a tray while you do the others. The mixture should make 15 balls.
Once you have prepared all the balls, remove the cashew butter from the freezer. Pick up each blob individually and roll quickly, to prevent the butter warming up, between your palms into a ball. Squeeze each butter ball into the hole you created in your bombs. Hold the bomb in your palm to prevent it falling apart when you put the butter inside. Either use a little remaining nut mixture to cover the hole or just shape the bomb around the hole.
Once you have done all 15 bombs, you can decorate with a goji berry on top or coat in desiccated coconut. Place in the freezer to set for at least half an hour.
