Acai Chia Pot

This is the simplest breakfast to prepare, no chopping fruit or blending anything. It will take you roughly 1 minute to make your pot before you go to bed and you will have a delicious breakfast ready for you when you wake up! Plus its easy to transport if you need to have breakfast on the go! Soaked chia seeds took me some getting used to, the texture is a bit funny some people liken it to frogs spawn….which sounds gross. To begin with I made bircher muesli (overnight soaked oats) with chia seeds in, which if your not used to the texture of the seeds is a great way to start. Chia seeds are packed full of protein and will keep you full till lunch, I love adding lots of toppings to make it even more delicious, try it with anything from a handful of granola, yoghurts or toasted nuts. If you don’t have acai powder you can make a plain chia pot and add flavour to it with your toppings.

Ingredients:

3 tbsp chia seeds
1 cup almond milk (or other nut milk)
1 tbsp goji berries
1 tsp maple syrup
1 tsp acai powder
(1 tsp maca powder – optional)

For the topping:

2 tbsp coconut (or other) yoghurt
1 tbsp cashew butter
handful of berries or half a banana

What to do…

In a jar big enough to allow the chia seeds to expand, combine all the ingredients. Put the lid on the jar and give it a good shake to mix everything together.
Put your jar in the fridge overnight to allow the seeds to soak up the liquid.
In the morning remove from the fridge and add your choice of topping, and a little more maple syrup if you have a sweet tooth like me!
