Power bar

Nut and seed bar

No added sugar, no grains, just nuts, seeds and dates…and my favourite ingredient, chocolate of course! Amazing pre or post gym energy boost, or when you just need a sweet fix and pick me up! 


1 cup blanched almonds
1 cup pecans / walnuts or a mix of both
1/3 cup mixed seeds (flax, pumpkin, linseed)
1/2 cup coconut flakes 
1 cup medjool dates 
1 cup boiling water 
Tbsp almond butter 
Tbsp coconut oil
Tbsp chia seeds 
Pinch of sea salt 

For the topping:

100g 70% dark chocolate (Lindt) 
Tbsp coconut oil
Tbsp goji berries / desiccated coconut
Pinch sea salt

What to do…

Place the nuts in a food processor and pulse until the nuts are crumbled into very small chunks. You don’t want them to be completely ground as the chunkyness gives a great texture. 

Add the seeds and coconut and blitz again. 

Heat the dates in a saucepan with the boiling water and almond butter. The dates will gradually melt and all the ingredients will combine. 

Allow to cool then add to the processor along with the coconut oil, chia seeds and a big pinch of sea salt. Turn on the processor and allow all the ingredients to come together. 

Line a baking tray with greeseproof paper. Put the mixture into the tray and flatten to cover the tray, about 2 cm thick. If your tray is too big just compact the mixture to one side. Place in the freezer. 
In a saucepan gently melt the chocolate and coconut oil. 

Once the bar has been in the freezer for at least 20 minutes, remove and pour over the chocolate mixture. Swirl your tray to ensure the entire top of the bar is covered. Sprinkle with goji berries or desiccated coconut and sea salt. Return to the freezer to set for a minimum of an hour. 

Once set you can cut your bar into smaller bars, whatever size you like and return to the freezer until needed…usually not very long!!! 

Wrap in greeseproof paper and carry with you as a delicious snack on the go! Perfect with your afternoon cup of tea!!
