I always have to finish a meal with something sweet, usually this is a couple of squares of dark chocolate. I’m also guilty of spooning nut butter straight from the jar into my mouth to fulfil a sweet craving. These bites are the best of both worlds, and because they are refined sugar free they are practically good for you….in moderation! They are naughty little bites of goodness and completely natural. I promise once you’ve made these you’ll never want that sugary treat again!
For the chocolate…
150g dark chocolate (minimum 70%)
3 tbsp coconut oil
1 tbsp goji berries
1 tbsp cacao powder
For the filling…
2 cups dates
1/2 cup raw cashew nuts or 1/3 cup cashew butter
1/3 cup coconut oil
pinch of sea salt
What to do…
Firstly line a muffin tin with 12 paper cases. Break the dark chocolate into a saucepan, I like to use either Lindt or Green and Blacks chocolate for this. Add 1 1/2 tbsp of coconut oil and stir until completely melted.
Spoon 1 desert spoon of chocolate mixture into each paper case so that the base of the case is completely covered. Place the tray of cases into the freezer.
Return the remaining chocolate mixture to the hob and add another 1 1/2 tbsp of coconut oil, along with the goji berries and cacao powder. Stir to throughly combine. Once melted put to one side.
To make the filling, if using pre bought cashew butter skip this step. Otherwise place the cashew nuts into your food processor and blend on high speed for 5-10 minutes. Continuously scraping down the sides of the bowl. The nuts should first crumble and then start to release their oils and turn into a butter consistency.
Place your nut butter in a saucepan with 1/3 cup of coconut oil, heat gently until both are melted and combined.
Place the dates in a food processor and pulse into a paste. If using normal dates add a couple of tablespoons of water to help break up the dates. Add your nut butter and oil mixture along with a pinch of salt and blend until smooth.
Remove your tray from the freezer. Using your hands roll the date mixture into balls a little smaller than golf ball size. Squash the balls flat into disks a few cm thick and place on top of the chocolate in the paper cases. Press down the mixture so it covers the chocolate.
With your remaining melted chocolate mixture carefully cover the date mixture in each case with a tablespoon of chocolate. Fill up all the cases so that the date mixture is completely covered. Top with a few extra goji berries for decoration.
Place in the freezer for 15 minutes to set.
Turn the chocolate bites out of the cases and tuck into your naughty but nice treat!
