Good morning chia pot

Chia Pot

This pretty little pot will take you a few minutes to prepare before bed then you can just grab it and go in the morning. To begin with I was unsure about the texture of chia seeds once soaked but this combination with coconut is delicious. The goji berries expand in the liquid and become really juicy, you could also use sultanas or raisins.

Top your jar with fresh berries and nut butter or yoghurt and granola. This is a great alternative to a bircher muesli if you want to try something different!

Ingredients:

3 dsp chia seeds
1 cup homemade almond milk (or other nut milk)
1 dsp desiccated coconut
1 dsp goji berries
tsp agave or maple syrup
tsp maca powder

What to do…

Find a jar big enough to allow the seeds to expand. Measure the ingredients into the jar and give it a thorough stir or shake with the lid on to thoroughly combine all of the ingredients.

Place in the fridge and leave overnight. In the morning the seeds will have expanded and soaked up the liquid to give a jelly like consistency. Top with extra maple syrup to sweeten and any other toppings of choice.

Dive in to your pot of seeds.
