Breakfast pots are the most useful things to have in the fridge especially when you have limited time in the mornings. I prepare these in the evening, often changing the ingredients for whatever I have in my cupboards, so I will be posting lots more recipes like this one. The recipe serves one, and should last a couple of days in the fridge. I created this by mistake as I was heading to bed one evening and loved it so much I thought I would share. Its really clean and fresh tasting, serve topped with fresh berries, a crumble of granola and some maple syrup!

Ingredients:

1/2 cup porridge oats
1 tbsp desiccated coconut
1 tbsp goji berries
2 tbsp chia seeds
1 cup rice milk (or other non-dairy alternative)
2 tbsp pomegranate seeds and their juice

What to do…

In an airtight jar add the dry ingredients and stir to combine. Then add the milk of your choice. Give it all a good stir, seal and place in the fridge overnight.
Simple as that!
