Colourful miso carrots

Carrot salad


I created this raw carrot salad as a side dish to thai fishcakes, I used these amazing colourful carrots from a local market. This is also great on its own as a light lunch.


2 red carrots
2 orange carrots
cashew nuts

For the dressing:

1 tbsp miso paste
1 tbsp cashew butter
juice of 1/2 lime
tsp agave syrup (or honey)
salt and pepper
1/4 cup hot water

What to do…

You can spiralse your carrots, but i just used a wide grater to make them into thin strips.
To make the dressing combine all the ingredients in a jar, put the lid on and shake well to combine.

Meanwhile roughly chop the cashew nuts and lightly toast in a  dry frying pan until golden.

Pour the dressing over the carrots and toss to make sure all the carrots are covered in dressing, sprinkle the cashews over the top and garnish with coriander.

Serve and tuck in
